Patricia’s Make Mas with Melongene Pie

Make mas at the fridge with this TASTY melongene pie. Don’t let the main ingredient fool you, the entire family will be lickin’ finga, wrist and elbow!

Ingredients:

  • 1 large onion, chopped
  • 4 cloves of garlic, finely chopped
  • 1 oz butter
  • 1 tin of Hunt’s diced tomatoes
  • 4 melongene, peeled, cubed and boiled
  • 4 eggs, beaten
  • 4 oz grated cheese
  • 4 oz crumbs
  • Salt & pepper to taste

Directions:

Saute onion and garlic in butter and add melongene and tomatoes – cook for about 10 minutes, mashing with back of spoon.   Stir in eggs and seasonings , then cheese and about ¾ of the crumbs.   Place in buttered casserole dish, top with remaining crumbs and dot with butter.   Bake at 350 for about 20 minutes.

    I thought that the dish looked good. But, I suggest that a different colour plate could have been used, because the red clashed and I had to look a little bit much to make out
    what was on the plate.
